How to store flour?

Always store flour in a cool , dark and airy place, for instance in a cupboard far from any heatsource in the kitchen. During hot weather bakers do not hesitate to store flour in the fridge.

When buying flour check the date on the packet. If you pour flour into another container, do not mix it with the remains of old flour. Immediately throw away flour that smells rancid or that has parasites or worms the presence of which is due to bad storage conditions either at your supplier's or in your kitchen.
