How to cut very thin slices of carpaccio?

The carpaccio is an Italian starter composed of slices either of beef, tuna or duck cutlets and served cold with olive oil vinaigrette and finely minced onions. The success of a carpaccio is in the thinness of the slices.

How to do it?

You just have to put the meat in the freezer for 10 minutes. Sealed by the cold the meat can be cut easily.
