Mix and match the flavours of your jams
Cherries blend well with currents which brings out their acid and gelling qualities. Nuts with figs, grapefruit and lemons with oranges. To heighten the taste of the jams you can add a small amount of brandy: plum brandy for plum jam... rhum for fig jam. With strawberry jam add red wine; blueberry armagnac, and orange Grand-Marnier. Count 2 tablespoons per kilo of fruit. |
