Sponge cake

  • Butter or no butter?


In the old days, butter helped to preserve the sponge cake, to make it more supple and to give it a subtler taste.
Nowadays, this practice has become less frequent. The sponge cake is prepared without butter.

To bake a better chocolate sponge cake, combine cocoa powder into the sifted flour.
