New knives in fine diamond stone. KASUMI introduces a new collection of cooking knives in "Ceramic" ; high-tech material made from Zircon (30 % diamond stone harder than metal) which were used to develop exceptional sharpness and long life blades with. They have been manufactured by associating the best of technology along with the unequaled know-how of his knife-master experts in manufacturing professional chef knives. Their skills were taught within the traditional japonese techniques of saber making, transmitted from generation to generation for more than 700 years (The Kasumi company is run by the 27th generation of knife-masters) in a reputed location of saber and knife manufactures, Seki, in the center of the japonese archipelago. The Zirconium particles that the KASUMI blade is made from are very thin. They give the blade a shock proof property. They also insure the uncomparable longevity of the sharp side. As a matter of fact, well maintained and protected from metal blades, knives are life-sharpened. The raw materials used are hardened at about 1500°C in a specially designed oven. The result is that only diamonds can be harder and only diamond stone grinders can sharpen these knives.
