Yellow Pectin

Slow hardening pectin used for gelification of a substance:

- Rich in sugars (more or equal to 76%)

- Acids (Ph between 3,2 and 3,5)

The gel that is made is not re-usable with heating.

Final texture is quite firm and not very soft.

Measure : 1 to 1,7% accordingly
