To Dress a Round Fish

To prepare a round fish by removing guts and gills

To Dress a Round Fish
  • Level : advanced
  • Use : Preliminary preparations for round fish.

Ingredients for To Dress a Round Fish :

  • Any round fish
  • Cutting board
  • Fish scissors
  • scaler
  • disposal tray
  • Sole filleting knife

Technical stages for To Dress a Round Fish :

  • Trim the fish.
  • Scale.
  • Open the anal part over a few centimeters using a knife.
  • Cut the end of the digestive tube.
  • Using scissors, cut out the gills without cutting the joint which holds the head.
  • Remove guts and inner membranes through the gills and anal hole. It may be sometimes necessary to remove blood clots (salmon, trout...), to do this, use a coffee spoon handle to avoid damaging the fish.
  • Rinse the fish under clear water, inside and out.
