Before starting this Merveille Fritters recipe, make sure you have organised all the necessary ingredients.
In the stand mixer recipient, shape the flour into a fountain with a hole in the centre. Add the salt, vanilla sugar, baking powder...
... the soft butter cut into pieces...
... and the whole eggs.
Mix using the dough hook...
... until the dough has a homogeneous consistency.
Shape into a ball...
... and cover with a tea towel. Set aside for at least 30 minutes.
Divide into 4 balls.
Using a rolling pin, roll out to a thickness of a few millimetres.
Using a fluted pastry wheel, cut 4cm wide strips.
Repeat the same operation, this time drawing slanted lines to create diamond shapes.
Make an incision in the centre of each diamond.
Immerse the fritters in oil, heated at 180°C. Deep fry until one side is golden...
... then flip to brown the other side. When both sides are golden, drain on a paper towel.
Sprinkle with icing sugar before serving.
