Divide the dough into about 15 balls, to the desired size. Cover the balls with a tea towel for 15 minutes.

... then using two forks, remove the fritters from the oil and hold vertically to strain over a tray or paper towel.
Sprinkle both sides of each fritter with castor sugar or icing sugar.
