Technical stages for Pumpkin Acras :
- Cut the pumpkin in quite fine pieces.
- in a non-stick saucepan along with olive oil.
- Cook covered on low heat for about 20 minutes.
- Mash the pumpkin with a fork.
- Add the yolks and cayenne pepper.
- Mix using a whisk to obtain a puree.
- Add flour and yeast.
- Heat your frying oil.
- Drop pieces of dough using two spoons.
- Acras swell and come to the surface.
- When browned, drain them on paper towel.
- Serve very hot (acras will be basted with lime just before eating them).
