  • 450 g peeled pumpkin
  • lime
  • 1 pinch cayenne pepper
  • 80 g flour
  • 2 egg yolks
  • 1/2 tsp yeast
  • 1 tsp olive oil
  • frying oil

Technical stages for Pumpkin Acras :

  • Cut the pumpkin in quite fine pieces.
  • in a non-stick saucepan along with olive oil.
  • Cook covered on low heat for about 20 minutes.
  • Mash the pumpkin with a fork.
  • Add the yolks and cayenne pepper.
  • Mix using a whisk to obtain a puree.
  • Add flour and yeast.
  • Heat your frying oil.
  • Drop pieces of dough using two spoons.
  • Acras swell and come to the surface.
  • When browned, drain them on paper towel.
  • Serve very hot (acras will be basted with lime just before eating them).
