Pumpkin Acras

For this recipe, you need :

  • 450 g peeled pumpkin
  • lime
  • 1 pinch cayenne pepper
  • 80 g flour
  • 2 egg yolks
  • 1/2 tsp yeast
  • 1 tsp olive oil
  • frying oil

Prepare all the ingredients.

Cut the pumpkin in quite fine pieces.

Sweat in a non-stick saucepan along with olive oil.

Cook covered on low heat for about 20 minutes.

Mash the pumpkin with a fork.

Add the yolks and cayenne pepper.

Mix using a whisk to obtain a puree.

Add flour...

...and yeast.

Heat your frying oil. Drop pieces of dough using two spoons.

Acras swell and come to the surface.

When browned...

...drain them on paper towel.

Serve very hot (acras will be basted with lime just before eating them).
