Ingredients for Caramelized Almonds :

  • 200 g 16°-syrup
  • 20 g glucose (optional)
  • 200 g sliced almonds

Technical stages for Caramelized Almonds :

  • Bring the 16° syrup with the glucose to a boiling point.
  • Add the sliced almonds. Make sure they are totally covered by the syrup.
  • Keep for 2 hours away from the stove.
  • Drain the almonds.
  • Spread them on a baking sheet and broil at 180/200°C or 356/392°F until caramelized.
  • Turn from time to time while broiling.
  • Spread on a sheet of baking paper and let cool.
  • Keep in a sealed plastic container.
