Orange Mix

Ingredients for Orange Mix :

  • 5 eggs
  • 5 egg yolks
  • 500 g sugar
  • 30 g cornstarch
  • 350 ml orange juice
  • 200 g melted butter
  • 3 orange zests

Technical stages for Orange Mix :

  • In a metal bowl, blend the eggs whith the yolks, sugar, cornstarch and orange juice. Stir in the melted butter and blanched chopped orange zests. Poach in a bain Marie for about 1 hour - stirring frequently - and put to a boil for 2 to 3 minutes without stopping to whisk.
  • When finished, let cool.
