Technical stages for Eggplants with Herbs :
- Prepare a broth with the oil, all the herbs and 1/2 liter water.
- Dice the eggplants and put them in the boiling broth for 10 minutes. Drain them and put them in a bowl.
- Filter the broth through a sieve, to half of its original volume.
- Add the tomato paste and blend well. Season to taste and pour onto the eggplants.
- Serve cold.
- SLIM TIPS:
- For a low-fat diet, only eat the eggplant and forget about the broth that holds the lipids form the oil.
