Ingredients for Eggplants with Herbs :

  • 1 lemon
  • 50 cl olive oil
  • 1 teaspoon coriander seed
  • 1 teaspoon cumin
  • 1 teaspoon peppercorn
  • 1 bouquet garni
  • 3 thyme sprigs
  • 4 eggplants
  • 2 tablespoons tomato paste
  • salt
  • pepper

Technical stages for Eggplants with Herbs :

  • Prepare a broth with the oil, all the herbs and 1/2 liter water.
  • Dice the eggplants and put them in the boiling broth for 10 minutes. Drain them and put them in a bowl.
  • Filter the broth through a sieve, to half of its original volume.
  • Add the tomato paste and blend well. Season to taste and pour onto the eggplants.
  • Serve cold.

  • For a low-fat diet, only eat the eggplant and forget about the broth that holds the lipids form the oil.
