Prepare all the ingredients.

...and sauté it in a frying pan until crispy.
Mix together the flesh of avocados, tomato, bacon, minced onion, thinly sliced red pepper and celery.
Add sugar, tabasco, vinegar.
Mix.
Fill the halved avocados...
...then sprinkle with grated cheddar.
Cook 7 to 10 minutes in very hot oven.
Serve along with tacos (corn chips).
