Ingredients for Apple Bavarian :

  • 700 g apple sauce
  • 1.5 leaf gelatin
  • juice of 1 lemon
  • 2 egg whites
  • 10 cl whipping cream
  • 2 tablespoons sugar
  • 2 drops vanilla extract

Technical stages for Apple Bavarian :

  • Soak the gelatin in cold water.
  • Meanwhile, mix in a pot the lemon juice and 2 tablespoons water. Add the drained gelatin and heat up. Do not boil!
  • Mix with the apple sauce.
  • Beatthe egg whites until stiff and with 1 tablespoon sugar.
  • Gently mix apple sauce and egg whites.
  • Pour thsi mix in a charlotte (or a baking) pan and let set in the fridge (2 hours minimum).
  • Before serving, whip up the and add one tablespoon of the remaining sugar.
  • Unmold the bavarois and decorate with the whipped cream.
  • Serve cold.
