Technical Stages :

• Soak the gelatin in cold water.
• Meanwhile, mix in a pot the lemon juice and 2 tablespoons water. Add the drained gelatin and heat up. Do not boil!
• Mix with the apple sauce.
• Beatthe egg whites until stiff and stiffen with 1 tablespoon sugar.
• Gently mix apple sauce and egg whites.
• Pour thsi mix in a charlotte (or a baking) pan and let set in the fridge (2 hours minimum).
• Before serving, whip up the whipping cream and add one tablespoon of the remaining sugar.
• Unmold the bavarois and decorate with the whipped cream.
• Serve cold.
