Technical stages for Lemon Bavarois :
- Dilute the lemon gel in warm water using a whisk.
- the liquid cream into whipped cream.
- Add the sugar to the whipped cream.
- Mix 1/4 whipped cream to the lemon preparation using a whisk.
- Gently add the rest using a rubber spatula.
- Mold in a crown-shaped silicone mold.
- Leave to harden in the fridge, one hour minimum.
- When serving, unmold onto a serving dish and decorate the center of the crown with seasonal fruits.
