Ingredients for Bavarian Cream with Pistachios :

  • 500 g milk
  • 50 g pistachio paste
  • 7 egg yolks
  • 200 g sugar
  • 12 leaves gelatin
  • 600 g whipping cream

Technical stages for Bavarian Cream with Pistachios :

  • Boil the milk together with the pistachio paste.
  • Meanwhile, soak the gelatin in cold water.
  • Whisk the eggs with the sugar until pale and foamy and pour the pistachio flavored boiling milk on top of it.
  • Cook "à la nappe" on the stove and add the drained gelatin. Mix.
  • Let cool, stirring from time to time.
  • Whip up the cold whipping cream into a whipped cream.
  • Combine whipped cream and pistachio mix.
  • Use immediately.
