Ingredients for Crustacean Butter :

  • 100 g butter
  • 100 g cook crustacean meat
  • salt
  • cayenne pepper

Technical stages for Crustacean Butter :

  • Crush the crustacean meat (langoustines, crawfish, crab, etc..)
  • When pureed, mix the meat and cream butter.
  • Knead. Season, adding a dash of Cayenne pepper.
