Almond and Chocolate Cookies

For this recipe, you need :

  • 8 egg whites
  • 250 g sugar (50 + 200)
  • 10 egg yolks
  • 215 g flour
  • 40 g cocoa powder
  • 100 g almond powder

Technical Stages :

  • Beat the egg whites until stiff, stiffen them with 50 g sugar.
  • Whisk the yolks and and remaining sugar until pale and thick, add the sifted flour, the cocoa and almond powder, then combine gently the egg whites.
  • Arrange on a baking shet in a spirale shape, using a regular pastry bag.
  • Bake at 200°C or 392°F or so.
