Chocolate and Hazelnut Cookies

For this recipe, you need :

  • 6 egg yolks
  • 150 g sugar (100 + 50)
  • 60 g flour
  • 25 g cocoa powder
  • 50 g ground roasted hazelnuts
  • 3 egg whites

Technical Stages :

  • Whisk the egg yolks with 100 g sugar until pale and thick.
  • Add the sifted flour and cocoa, the hazelnuts.
  • Combine with the egg whites beaten until stiff and stiffened with the remaining sugar.
  • Arrange on a sheet of baking paper.
  • Bake at 170°C or 338°F for 50 minutes.
