Technical stages for Chocolate Cookies :
- Whisk the egg yolks and sugar until pale and thick.
- Mix the flour, sugar and cocoa together.
- Beat the egg whites until stiff and stiffen with sugar.
- Mix the 3 preparations, combining the egg whites very gently.
- Bake in a warm oven at 180-200°C or 356-392°F on a slightly greased baking sheet or in a buttered and floured pan.
- When finished, unmold on a rack and let cool.
