  • 20 egg yolks

  • 400 g flour
  • 100 g icing sugar
  • 100 g cocoa
  • Mass 3: Meringue
  • 20 egg whites
  • 100 g sugar

Technical stages for Chocolate Cookies :

  • Whisk the egg yolks and sugar until pale and thick.
  • Mix the flour, sugar and cocoa together.
  • Beat the egg whites until stiff and stiffen with sugar.
  • Mix the 3 preparations, combining the egg whites very gently.
  • Bake in a warm oven at 180-200°C or 356-392°F on a slightly greased baking sheet or in a buttered and floured pan.
  • When finished, unmold on a rack and let cool.
