  • 5 egg yolks
  • 125 g sugar
  • 125 g flour
  • 100 g icing sugar
  • 5 egg whites
  • 25 g sugar

Important points for Ladyfingers :

  • Whisk the egg yolks and sugar until pale and thick.
  • Add the sifted flour.
  • Beat the egg whites until stiff and stiffen them halfway through with the sugar.
  • Gently combine the meringue with the first mix, using a spatula.
  • Lay with a pastry bag on baking paper-covered baking sheets.
  • Sprinkle with icing sugar.
  • Bake in warm oven (180°C or 356°F) for about 15 minutes.
