Savoy Biscuits

Ingredients for Savoy Biscuits :

  • 8 egg yolks
  • 250 g sugar
  • 125 g flour
  • 60 g cornstarch
  • 8 egg whites

Important points for Savoy Biscuits :

  • Whisk the eggs and sugar until pale and thick.
  • Sift the flour.
  • Beat the egg whites until stiff.
  • Combine 1/4 of the whites with a whisk, and gently add the rest with a wooden spatula.
  • Bake in a warm oven.
  • Unmold on a rack when finished.
