  • cognac or armagnac or other brandies

Technical stages for Jar of Foie Gras :

  • Prepare the foies. Soak the lobes of foie under cold running water, remove the nerves, season and marinate them. Put them in a jar.
  • You can add a dash of cognac, armagnac or other brandies.
  • Seal tightly the jar. Put then in a large pot with a board at the bottom to prevent them from sticking during the sterilization phase. Cover with cold water.
  • Bring to a boiling point and keep cooking for 20 to 30 minutes. Let it cool in the sterilizing water.
  • Keep refrigerated.
