Vegetable Broth

For this recipe, you need :

  • 1 litre water
  • 4 carrots
  • 4 leeks
  • 1 branch celery
  • 1 bouquet garni
  • coarse salt

Technical Stages :

  • Peel and wash all vegetables. Cook them with the bouquet garni for 1h30, covered, in salted boiling water.
  • Pass the broth through a chinois sieve. Season.
  • Serve hot.
