Technical stages for Mussel Brochettes :
- Brush and rinse the mussels in successive baths.
- Open them over strong heat in a large pot. Take them out of their shells.
- Wash and coarsely dice the vegetables.
- Alternate vegetables and mussels on brochette sticks.
- Sprinkle with herbs and BBQ or bake them in the oven.
- When cooking, moisten with vinegar or lemon juice.
