Technical stages for Red Fruits Christmas Log :
- a log mold using plastic wrap.
- Fill the bottom of the mold halfway with .
- Top with fresh raspberries.
- Fill all the way up with mousse and the surface.
- Cut a strip of and place it on the mousse. Leave to harden in the fridge for a few hours.
- Remove from the mold on a log tray and remove the plastic wrap.
- Coat the surface of the log with red glazing that was previousely melted and slighted cooled.
- Decorate with Christmas figurines.
- Reserve in the fridge until serving dessert.
