Fruit Cake

For this recipe, you need :

  • 320 g flour
  • 200 g soft butter
  • 4 eggs
  • 1 tablespoon milk
  • 150 g sugar
  • 2 little bags baking powder
  • 5 tablespoons rum
  • 100 g candied fruits
  • 100 g raisins

Technical Stages :

  • Soak the fruits and raisins in rum.
  • Meanwhile, mix the butter and sugar with a wooden spatula until pale and foamy.
  • Add the eggs, milk and soaked fruits. Mix well.
  • At last, combine the sifted flour with the baking powder.
  • Mold in a buttered cake pan and bake in warm oven (180°C or 356°F) for 40 minutes.
  • Check that the cake is baked at the end by dipping the blade of a knife in it. If it comes out dry, the cake is ready. Unmold and leave to cool on a rack.
