  • 200 g cream butter
  • 6 eggs
  • 250 g flour
  • 1 package baking powder
  • 300 g mixed vegetables
  • (carrots, turnips, peas, green beans, etc..)
  • orange and lemon zests
  • cinnamon
  • walnuts

Technical stages for Vegetable Cake :

  • Cut the vegetables in macedoine, macedoine and drain.
  • Pat dry by wrapping the vegetables in a dry cloth.
  • Flour the vegetables.
  • In a bowl, mix the soft butter with the eggs. Add the flour, baking powder, citrus zests, cinnamon, and season.
  • Combine gently the floured vegetables and walnuts with this dough.
  • Pour in a buttered and floured cake pan.
  • Bake at 250°C or 482°F for 10 minutes, then lower the temperature to 170°C or 338°F and bake for an additional 45 minutes.
  • When finished, unmold, slice and eat warm.
