Technical stages for Vegetable Cake :
- Cut the vegetables in macedoine, macedoine and drain.
- Pat dry by wrapping the vegetables in a dry cloth.
- Flour the vegetables.
- In a bowl, mix the soft butter with the eggs. Add the flour, baking powder, citrus zests, cinnamon, and season.
- Combine gently the floured vegetables and walnuts with this dough.
- Pour in a buttered and floured cake pan.
- Bake at 250°C or 482°F for 10 minutes, then lower the temperature to 170°C or 338°F and bake for an additional 45 minutes.
- When finished, unmold, slice and eat warm.
