Ingredients for Banana Fudge :

  • Part 1:
  • 225 g whipping cream
  • 100 g sugar
  • 75 g glucose (optional)
  • 50 g butter
  • Part 2:
  • 125 g sugar
  • Part 3:
  • 500 g ripe bananas

Technical stages for Banana Fudge :

  • Bring to a boil the ingredients from part 1.
  • Meanwhile, prepare a caramel with the sugar from part 2. When the caramel is brown, pour part 1 on part 2, slowly, and add the sliced bananas. Cook for 10 minutes, constantly stirring.
  • Pour on a slightly greased baking sheet and let it cool.
  • Unmold and cut in squares.
