Fish Cari

Ingredients for Fish Cari :

  • 1 kg fish of your choice
  • 3 or 4 garlic cloves
  • 6 tomatoes
  • 2 onions
  • 1 teaspoon saffron or curcuma
  • thyme
  • chopped parsley
  • olive oil
  • cayenne pepper

Technical stages for Fish Cari :

  • Clean the fish, wash it, dry it and slice it.
  • Peel the tomatoes, chop the onions, garlic and chili peppers.
  • Sweat the garlic and onion in a large pot, add the saffron and cayenne without browning.
  • Add the tomatoes, thyme and parsley.
  • Cook well and add the slices of fish when the tomatoes start to brown. Cover. Cook over medium heat, the fish must give enough water to cook.
  • If at the end there doesn't seem to be enough sauce, add a bit of water and bring to a boiling point for a few minutes.
  • Serve with creole rice.
