Chicken Cari

Technical stages for Chicken Cari :
- Cut the chicken in 8 pieces.
- the onions and tomatoes.
- Crush together the salt, pepper, garlic and ginger.
- Brown the chicken in very warm oil.
- When golden, add the onions and stir.
- Add the crushed mix and blend well. Add the tomatoes and thyme, mix. Add the saffron or curcuma and to half-height, then bring to a boiling point. As soon as it starts boiling, lower the heat and simmer for 15 minutes.
- There must be enough sauce, but it should be fairly thick.
- Season if needed.
- Serve with creole rice.
