Ingredients for Chicken Cari :

  • one 1.2 kg chicken
  • 2 medium onions
  • 4 garlic cloves
  • 8 small tomatoes
  • 1 piece ginger
  • 1 thyme sprig
  • 1/2 teaspoon curcuma or saffron
  • salt
  • pepper to taste
  • oil

Technical stages for Chicken Cari :

  • Cut the chicken in 8 pieces.
  • the onions and tomatoes.
  • Crush together the salt, pepper, garlic and ginger.
  • Brown the chicken in very warm oil.
  • When golden, add the onions and stir.
  • Add the crushed mix and blend well. Add the tomatoes and thyme, mix. Add the saffron or curcuma and to half-height, then bring to a boiling point. As soon as it starts boiling, lower the heat and simmer for 15 minutes.
  • There must be enough sauce, but it should be fairly thick.
  • Season if needed.
  • Serve with creole rice.
