Slim Eggplant Caviar
  • For : 4 to 6 servings
  • Time : 45 minutes
  • Difficulty : easy

For this recipe, you need :

  • 3 or 4 eggplants
  • 2 or 3 tomatoes
  • 1 onion
  • 1 dl olive oil
  • salt
  • pepper

Technical Stages :

  • Cook the whole eggplants for 15 to 20 minutes in a 200°C or 392°F oven.
  • Peel and seed the tomatoes, crush them.
  • Peel and finely ciseler the onion.
  • Using a spoon, remove the meat from the eggplants and mash it.
  • Mix together tomatoes, eggplant meat, onion, oil in a blender. Add salt and pepper.
  • Serve ice-cold.

  • Thsi recipe contains vegetables from a mediterranean diet/ You can diminish the amount of oil to make it a slim-oriented caviar.
