Ingredients for Slim Eggplant Caviar :

  • 3 or 4 eggplants
  • 2 or 3 tomatoes
  • 1 onion
  • 1 dl olive oil
  • salt
  • pepper

Technical stages for Slim Eggplant Caviar :

  • Cook the whole eggplants for 15 to 20 minutes in a 200°C or 392°F oven.
  • Peel and seed the tomatoes, crush them.
  • Peel and finely the onion.
  • Using a spoon, remove the meat from the eggplants and mash it.
  • Mix together tomatoes, eggplant meat, onion, oil in a blender. Add salt and pepper.
  • Serve ice-cold.
