Technical stages for Slim Eggplant Caviar :
- Cook the whole eggplants for 15 to 20 minutes in a 200°C or 392°F oven.
- Peel and seed the tomatoes, crush them.
- Peel and finely the onion.
- Using a spoon, remove the meat from the eggplants and mash it.
