  • 2 egg yolks
  • 10 cl milk
  • 100 g crème fraîche
  • 1/2 teaspoon cassonade

  • Blend the foie gras.
  • Add the egg yolks, crème fraîche, and milk. Adjust seasoning.
  • Blend once again to obtain a homogeneous mixture.
  • Pour the foie gras mixture into crème brulée dishes.
  • Bake 30 minutes in preheated oven at 100°C.
  • When finished, remove the dishes from the oven and leave to cool.
  • Set aside until serving.
  • Up to this stage, you may prepare this recipe a long while ahead, even the day before.
  • When serving, sprinkle the surface of the crèmes with cassonnade and caramelize under the broiler, using a caramelizing iron or torch.
  • Decorate with minced herbs.
  • Serve immediately.
