Prepare all ingredients.
Blend the foie gras.
Add the egg yolks, crème fraîche, and milk. Adjust seasoning.
Blend once again to obtain a homogeneous mixture.
Pour the foie gras mixture into crème brulée dishes.
Bake 30 minutes in preheated oven at 100°C.
When finished, remove the dishes from the oven and leave to cool. Set aside until serving.
Up to this stage, you may prepare this recipe a long while ahead, even the day before.
When serving, sprinkle the surface of the crèmes with cassonnade...
...and caramelize under the broiler, using a caramelizing iron or torch.
Decorate with minced herbs. Serve immediately.
