Cold Starters

Celery Rémoulade
  • For : 4-5 servings
  • Time : 30 minutes
  • Difficulty : easy

For this recipe, you need :

  • 1 celeriac
  • 2 teaspoons Dijon mustard
  • 2 egg yolks
  • 25 cl sunflower seed oil
  • vinegar
  • salt

Technical Stages :

  • Prepare a mayonnaise with the mustard, egg yolks, oil, salt and pepper. Add a dash of vinegar.
  • Peel the celeriac and coarsely grate it.
  • Mix it in the spiced up mayonnaise. Do no wait or the celeriac will turn black.
  • Keep refrigerated.
