Chestnut Charlotte

For this recipe, you need :

  • Mass 1:
  • 1/2 litre of milk
  • 12 egg yolks
  • 150 g sugar
  • 10 leaves gelatin
  • Mass 2:
  • 500 g chestnut puree
  • 100 ml rum
  • Masse 3:
  • 1 litre whipping cream
  • lady fingers

Technical Stages :

  • Soak the gelatin in cold water.
  • Prepare some custard with the elements from mass 1.
  • Combine the softened and drained gelatin with the warm custard.
  • Leave to cool at room temperature, occasionnally stirring.
  • Dilute the chestnut puree with the rum, using a whisk.
  • Add the chestnut mix to the custard. Blend well.
  • Whip up the cold whipping cream. Combine gently with the cold chestnut custard.
  • Mould in a charlotte pan. Before this, coat the inside of the pan with lady fingers.
  • Leave it to set in the fridge.
  • Your choice of decoration with it.
