Cheese Cake 2

Ingredients for Cheese Cake 2 :

  • 350 g sablés breton or petits beurre
  • 110 g melted butter
  • 100 g cream cheese
  • 250 g ricotta
  • 75 g sugar
  • 65 g icing sugar
  • 1 sachet vanilla sugar
  • 2 egg whites
  • berry coulis berries

Technical stages for Cheese Cake 2 :

  • Roughly crush the biscuits.
  • Add the melted butter and mix to obtain a dough.
  • Spread this dough on a dessert ring pan of Ø24 cm.
  • In a terrine, mix the 2 well drained cheeses using a whisk.
  • Beat the egg whites firm adding 10 g caster sugar.
  • Add the remaining sugars (caster sugar + icing sugar + vanilla sugar) to the whites, using a wooden or rubber spatula.
  • Add this meringue to the cream cheese.
  • Pour this cheesy preparation on the biscuit layer.
  • Smooth the surface and bake in hot oven, 150°C for 30 minutes.
  • When finished, leave to cool before removing from the mold.
  • Serve very cold along with a coulis of raspberries or other berries.
