Technical Stages :
- Roughly crush the biscuits.
- Add the melted butter and mix to obtain a dough.
- Spread this dough on a dessert ring pan of Ø24 cm.
- In a terrine, mix the 2 well drained cheeses using a whisk.
- Beat the egg whites firm adding 10 g caster sugar.
- Add the remaining sugars (caster sugar + icing sugar + vanilla sugar) to the whites, using a wooden or rubber spatula.
- Add this meringue to the cream cheese.
- Pour this cheesy preparation on the biscuit layer.
- Smooth the surface and bake in hot oven, 150°C for 30 minutes.
- When finished, leave to cool before removing from the mold.
- Serve very cold along with a coulis of raspberries or other berries.
