Prepare all ingredients:
Roughly crush the biscuits.
Add the melted butter and mix to obtain a dough.
Spread this dough on a dessert ring pan of Ø24 cm.
In a terrine, mix the 2 well drained cheeses using a whisk.
Beat the egg whites firm...
... adding 10 g caster sugar.
Add the remaining sugars (caster sugar + icing sugar + vanilla sugar) to the whites, using a wooden or rubber spatula.
Add this meringue to the cream cheese.
Pour this cheesy preparation on the biscuit layer.
Smooth the surface and bake in hot oven, 150°C for 30 minutes.
When finished, leave to cool before removing from the mold. Serve very cold along with a coulis of raspberries or other berries.
