  • 8 goat cheeses "Cabécou" or 4 crottins de Chavignol
  • 8 slices of smoked bacon
  • 4 sheets of phyllo paste
  • 2 tomatoes
  • mixed salads
  • vinaigrette dressing

Technical stages for Saladine with Warm Goat Cheese and Wrapped Bacon :

  • Quickly cook the bacon in a pan.
  • Put the 4 sheets of phyllo in the middle of the counter. Put a slice of bacon in the middle. Add two goat cheeses (Cabécou) or 1 crottin de Chavignol halved, and cover with a second slice of bacon. Fold the phyllo to form a little rectangular package.
  • Bake in warm oven and leave it until the phyllo gets completely colored. It must have a nice brown colour. Don't use an oven that is too warm, to give the cheeses time to melt without burning the phyllo. 180°C or 356°F should be OK.
  • Meanwhile, arrange a bed of salads in the middle of the plates. Add the dressing, and surround with the tomatoes cut in pieces.
  • When the cheeses are baked, put them on the salad and serve immediately.
