American Calamari

Ingredients for American Calamari :

  • 4 garlic cloves
  • 2 chopped onions
  • olive oil
  • 2 kg calamari
  • 2 tablespoons tomato paste
  • 1 litre white wine
  • 1 bouquet garni
  • salt, pepper
  • cornstarch

Technical stages for American Calamari :

  • Sweat the chopped onion in olive oil. Add the crushed garlic, tomato paste, and the calamari cleaned and cut in big squares (2x2 cm or 0,79x0,79 inch).
  • Moisten with white wine, add the bouquet garni and season. Simmer over medium heat for 30 minutes. Remove the bouquet garni when finished. Bind the sauce witth cornstarch. Correct seasoning. Serve warm.
  • NOTE:
  • The longer the softer. If you cook the calamari too fast, they'll tend to be more elastic.
