Technical stages for Potato Chips :

  • Peel and cut the potatoes in thin slices with a mandolin.
  • Dip them in cold water and mix well to get rid of a maximum of starch that is in the potatoes.
  • Drain and pat dry. Fry and leave them in the oil until they are golden, stirring constantly with a skimmer to prevent them form sticking to each other.
  • Drain, add salt.
