Polish-Style Cauliflower

Ingredients for Polish-Style Cauliflower :

  • 1 cauliflower
  • 2 hard-boiled eggs
  • 60 g butter
  • 100 g bread crumbs
  • 2 tablespoons chopped parsley
  • juice of a lemon
  • salt
  • pepper

Technical stages for Polish-Style Cauliflower :

  • Cut the cauliflower in florets, wash and boil it. When finished, drain and keep it warm.
  • Shell the eggs, sort the whites and yolks.
  • Press the yolks through a sieve and finely chop the whites.
  • Melt the butte rin a pan and add the bread crumbs. Cook until crispy. Take away from the heat and add the chopped parsley. Season and add the lemon juice.
  • Arrange the cauliflower in a warm service dish. Decorate with the bread crumbs, egg whites and yolks.
