Tomato Clafoutis

Ingredients for Tomato Clafoutis :

  • 2 green bell peppers
  • 3 big vine tomatoes
  • 2 eggs
  • 2 egg yolks
  • 1/4 litre of milk
  • 1/4 litre of liquid cream
  • 10 g corn starch (Maïzena)
  • 2 tablespoons chopped parsley
  • 30 g butter
  • salt
  • pepper

Technical stages for Tomato Clafoutis :

  • Grill the peppers in very hot oven for 20 to 25 mn so that they blacken and are easy to peel and seed.
  • Tear the pulp into strips.
  • Peel and seed the tomatoes.
  • Add salt on them and leave them to drain.
  • In a bowl, beat the whole eggs along with the egg yolks, milk and liquid cream.
  • Add the corn starch, salt and pepper. Mix. Add the chopped parsley.
  • In a baking dish, place the halves tomatoes and half of the pepper strips on the bottom.
  • Pour in the mixture that was obtained.
  • Spread the rest of the pepper strips on the top and bake 35 to 40 minutes at 180°C.
