Crushed Tomato

Ingredients for Crushed Tomato :

  • 800 g fresh tomatoes
  • 30 g shallots
  • 2 garlic cloves
  • 1 bouquet garni
  • 2 cl olive oil
  • salt
  • pepper
  • sugar

Technical stages for Crushed Tomato :

  • Peel and crush the tomatoes.
  • Peel, wash and ciseler finely the shallots.
  • Prepare a bouquet garni.
  • Peel 2 garlic cloves.
  • Sweat the shallots without browning for 2 to 3 minutes. Stir with a wooden spoon.
  • Add the crushed tomatoes. Add the bouquet garni and whole garlic cloves. Season with salt, pepper and a pinch of sugar.
  • Cover with baking paper the size of the pot.
  • Cook slowly over low heat. Stir from time to time. When finished, remove the bouquet garni and garlic cloves.
  • Season if needed.
