Vegetable-based Sauces

Crushed Tomato
  • For : 500 g sauce
  • Time : 1 heure
  • Difficulty : easy

For this recipe, you need :

  • 800 g fresh tomatoes
  • 30 g shallots
  • 2 garlic cloves
  • 1 bouquet garni
  • 2 cl olive oil
  • salt
  • pepper
  • sugar

Prepare all the ingredients.

Peel the shallots...

...and ciseler them finely.

In a large pot, heat up the olive oil.

Add the chiseled shallot...

... and let it sweat without browning for a few minutes.

Add the peeled, seeded and crushed tomatoes.

Season with salt, pepper and a bit of sugar.

Add the bouquet garni...

...and crushed garlic.

Cook over medium heat for about 30 minutes. Cooking will take more or less time depending on the tomatoes. Their water must have evaporated at the end.
