Technical stages for Olive Jam :
- Thinly chop pitted black and green olives and zested lemons.
- Prepare the jam with 500 g sugar. Meanwhile, chop the zests of the 3 lemons then them and them in sugar until well crunchy. Add them to the jam at the end of the cooking process.
- Fill the jars dividing zests among each.
- This jam will go perfectly along side fish and white meat.
