Ingredients for Olive Jam :

  • 250 g black olives
  • 250 g green olives
  • 3 lemons
  • 500 g jam sugar

Technical stages for Olive Jam :

  • Thinly chop pitted black and green olives and zested lemons.
  • Prepare the jam with 500 g sugar. Meanwhile, chop the zests of the 3 lemons then them and them in sugar until well crunchy. Add them to the jam at the end of the cooking process.
  • Fill the jars dividing zests among each.
  • This jam will go perfectly along side fish and white meat.
