Ingredients for Mirabeau Beef Rib :

  • one 800 g beef rib
  • 2 tablespoons oil
  • 40 g anchovie fillets in oil
  • 120 g stoned green olives
  • 12 tarragon leaves
  • salt
  • pepper

Technical stages for Mirabeau Beef Rib :

  • Remove the fat from the rib, if necessary. Using a knife, cut 3-4 slots on the side, so that it won't curl up while cooking. Flatten to 3.5 cm (1,38 inches) thickness.
  • Turn on the oven on: grill.
  • Put the rib in a slighlty greased roasting pan. Put it as close to the grill as possible.
  • Cook for 3 minutes or until a brown crust appears on the top side.
  • Flip the meat and cook for 3 minutes. Lower the pan by 16 to 18 cm and cook for 3 minutes on each side.
  • Turn off and open the oven door for 2 minutes to evacuate the excess heat. Close and let the meat rest for 10 to 15 minutes.
  • Meanwhile, drain the anchovies, cut them in two lengthwise. Cut the rib in four strips on the wide side, and transfer onto a warm service dish, reconstituting its original shape.
  • Season with salt and pepper. Put the anchovie fillets on top, spread the tarragon leaves. Finish up with the olives all around the rib.
