Ingredients for Veal Ribs Papillotes :

  • 6 fair-sized veal ribs
  • 2 tablespoons butter
  • 125 g mushrooms
  • 3 tomatoes
  • 1 slice ham
  • 1 glass dry white wine
  • 3 tablespoons oil
  • 2 tablespoons chopped parsley
  • salt
  • pepper

Technical stages for Veal Ribs Papillotes :

  • Clean the mushrooms and them.
  • Peel the tomatoes under hot water and cut them in pieces.
  • Dice the ham.
  • Sweat the mushrooms in butter for 3 minutes. Add the tomatoes, ham, wine, salt and pepper. Bring to a boiling point and cook over medium heat for 10 minutes.
  • Season the ribs with salt and pepper and cook in olive oil.
  • Cut 6 sheets of aluminium foil. Grease them slightly with the remaining oil. Put the ribs in the center of each foil with the tomato, ham and mushroom sauce.
  • Sprinkle with parsley. Wrap the papillotes.
  • Bake in warm oven for 15 minutes approximately.
  • Serve in the papillotes.
